you would have to included the "Program Folder" any "AppData" or "ProgramData" Folders, any "Registry Settings" and System File Requirements...
It is not a simple task to complete and get exactly correct..

There is Portable versions of their Software suite.

I was able to run version 6.2.6 Portable in Win10PESE and Win10XPE with no problems but 6.3.4 would not start.

If you want to give it a try. Go to

https://www.libreoffice.org/download/portable-versions/

Download Version 6.2.6 and install it to C:\LibreOffice, Run and configure all programs as you want.

Create a 7z archive with the installation folder. Go inside the folder, Select all Folders and File, Right click 7Zip/ add to Archive.
Make sure it's named LibreOffice.7z

Download plugin for your build place it in your apps in project. Provide your LibreOffice.7z to the plugin and hit play.

How do I install Libre Office as part of the Live DVD?

Quick way, put LibreOffice Portable inside boot.wim
-- Important thing, Portable works on writable environment (eg. usb, boot.wim, fbwf etc.)

LibreOffice Portable Fresh 6.4.0 works fine here (tested with Azin - WimBuilder)
https://portableapps.com/apps/office/libreoffice_portable

LibreOffice Portable Legacy 5.4 is also available which is smaller
https://portableapps.com/apps/office/libreoffice-portable-legacy-5.4

If you use one of the projects that use Plugins around here
(which Live DVD you did not wrote, I assume Win10PE -->  Azin, Win10PESE projects available that use Plugins etc.)

There is already a plugin available
+
You can download "LibreOffice paf" Plugin with UI
See: Adding 3rd party Plugins: \Downloads\ - MyPlugins_Direct - Yomi
+
You can download "LibreOffice paf" Plugin with Codebox
See: Downloading Plugins with a CodeBox
Use Line:
Code: [Select]
Call,DownloadX,"%BaseDir%\Projects\Yomi\AppY\Supplementary\Office\LibreOffice_Portable_paf.script"

I noticed yesterday that Kyhi has made a nice XPEPlugin...
It need to run from a writable media.

http://theoven.org/index.php?topic=2607.msg35394#msg35394

It is very easy to port to other projects. Took 10 minutes to convert to Win10PESE.

only thing the compiler complaints that it is unable to extract umpdc.dll From source.
I believe that this file is not Present in 1809 so I copied it from 1909 and it worked.

Libreoffice installed in start menu + files associations all working well.

Hi Malok,

Thanks for info Malok, nobody asks for file association for LibreOffice for 5 years (or more) "LibreOffice paf" Plugin created.

Probably you already have the The Plugin :
See: Small Green Download Button on Plugins - Reply 1: Update Plugins

If you do not have "LibreOffice paf" Plugin  follow previous post info:
There is already a plugin available

It will take 10 seconds to download/update Plugin.

start menu already existed, 6.4.0 was already working fine, Launch button already was there to change default LibreOfficePortable settings,
only added popular file associations and other useful simple things.

As written on other places before (since 10 years I guess), Plugins works our of box with
 Gena Win7PESE Win8PESE Win8.SE Win10PESE Azin (WimBuilder & LiveSystemPro)
  with other words,
"LibreOffice paf" Plugin works fine with  Gena Win7PESE Win8PESE Win8.SE Win10PESE Azin (WimBuilder & LiveSystemPro)
